OUR STORY

On the corner of Chorro de Quevedo, the only restaurant specialized in mushrooms in Colombia opens its doors. A menu revolving around one ingredient: MUSHROOMS. A challenge for its time, with effort and dedication it succeeds in establishing itself as the best mushrooms in Bogotá

With a star in the sky, our father, and with an angel on earth, our mother. We decided to continue the story, with the help of spouses and children we began to rebuild the dream, and here we go again with the hope of continuing the legacy.

The Return of Merlin

On February 1st, 2023, Merlin returns. The hugs from our customers, the voices that break recalling the moments lived, the families that come to greet us and give us encouragement, the customers of 20 years who come with their families to show them the place where they used to meet for coffee and mushrooms, the couples who met at Merlin, the friends who celebrated their academic achievements— a moment to thank so much love and to tell you that Merlin will continue for a long time, offering the best and making every moment an unforgettable experience.”

THE MERLIN FAMILY

Don Carlos: A music lover, a DJ; he sets the ambiance for every moment of our visitors.

My father, Honorio: The host, ‘Good day, welcome to Merlin,’ he says… He invites and bids farewell to our visitors. He ensures that no one leaves dissatisfied, attentive to resolving any situation, whether with a glass of wine or a coffee, all to make each person feel at home.

My mother, Alcira: The chef, her wonderful hands work magic in the kitchen. She adds flavor to every dish, the secret touch, and the love that goes into every preparation served at your table.

My sister, Yazmin: The chef’s apprentice, now the sous chef of the restaurant, inheriting mom’s seasoning and love for cooking.

My brother, Edwin: The Visionary, in charge of service, bringing energy to the group to pursue the goal of crossing borders with Merlin.

Myself, Diana: Responsible for administration and passionate about service. Setting a table for a celebration, organizing events is my weakness. Convinced that happy moments are not repeated, so every gathering must be unforgettable, every detail matters.
