Our story began in 1996, when we opened Merlín’s doors on the corner of Chorro de Quevedo. From that moment, we embraced a unique challenge: to become Colombia’s first and only restaurant specializing in mushrooms. Through dedication and a love for what we do, Merlín became the go-to place for those who appreciate this delicious ingredient.
After a period of closure, we reopened on February 1, 2023. It was an emotional return, with customers greeting us with hugs and tears of joy, remembering the special moments they had experienced at our restaurant. Families who used to gather at Merlín for coffee and mushrooms, couples who first met at our tables, friends who celebrated their milestones with us—they all came back to show their support and be part of this new chapter.
Behind Merlín is a family that has poured its heart into every detail. Don Carlos, a music lover, creates the perfect atmosphere for every moment at the restaurant. My father, Honorio, with his warm welcome, ensures that every visitor feels at home and leaves with a smile. My mother, Alcira, is the magic in the kitchen, the chef whose hands turn ingredients into true works of art, full of flavor and love. My sister, Yazmin, is our sous-chef, who has inherited mom’s passion and seasoning. Edwin, my brother, is the visionary who drives us forward, always looking for ways to take Merlín to new heights. And I, Diana, handle the management, ensuring every celebration is unforgettable.
With the support of our partners, children, and a few dreamers who’ve crossed our path, we have decided to continue Merlín’s story. With a star in the sky and an angel on earth, we keep building this dream, ready to offer the best of ourselves in every dish and every moment we share with our guests.
